Sure, you just need to set up a timeperiod (timeperiod.cfg) for that host
and define the parameters within it.

I have found how to schedule a single downtime for a host but is there a way
within Nagios to schedule a reoccuring downtime? say from 8pm to 8am every
weekday and not at all on the weekends. Thanks,
