I can obviously just bump the numbers up but I want to make sure that I'm not ignoring something obvious that may have unwanted results after the fact. Should I use these numbers I see here as the basis for my new thresholds?

The simple logic is: It seemed like a good value to someone at some time
for some systems.

If anything nagios MUST be adjusted to meet the needs of YOUR
environment. So if your system runs normally around 365 processes then
adjust your thresholds accordingly.
