That would be a function of /bin/mail or whatever program you are using in you commands.cfg for *-notify-by-email. Looking at mail's manpage, it does not appear that you can specify an smtp host.

Is there a way to stipulate an SMTP server for the notifications other than
the Local Host that Nagios is running on? I would like to be able to
specify it either by IP address or domain name.
