using multiple network cards

Bear in mind that link aggregation (i.e. adapter teaming), requires a device on the other end that also supports this standard (which I believe is 802.1ab, but I forget now). Without that, adapter teaming is useless.
Another thing to try if you are really set on putting two NICs in your Nagios box would be to set up a source routing scheme of some sort. Just create static route statements on your box that point to some hosts out one interface, and point the rest out of the other interface. This can get very confusing very quickly though if you have many hosts on your network...I know on our network I would not relish trying to set a scheme like that up.
Currently I have Nagios on a SunFire 280R running Solaris 9 with only a single NIC and right now I have ~200 hosts and ~800 services being monitored and have not noticed any issue with the checks completing relatively quickly.

You may want to consider adapter teaming. You may have to buy two new NIC's, but it will give you twice the bandwidth.
See Here:
Intel(R) PRO/100S Server Adapter is supported with the 2.2.x and
2.4.x kernels for i386 and IA64 architectures with the e100-1.5.5a driver.
FEC* support is included in ANS-1.2.29 teaming software. ANS-1.2.29 is
supported for both the 2.2.x and 2.4.x kernels on i386 only. One note is
that there is both a client and a server version of the Intel PRO/100S
Adapter. Only the server version supports the ANS teaming software.

That would be nice... I'd be happy to put a second nic in my nagios box if this would work. Right now, when I start nagios it will schedule checks six seconds apart and take about 11 minutes to get through them all.
However, once they go they reschedule themselves when the next one would be. I don't think a second nic would make it go any faster.

Is it possible to get nagios to use multiple network interfaces for it's checks. The goal would be to reduce the time taken to execute checks. I'd like it to complete all checks w/in 5 minutes.
