I use Subversion. I keep a local copy of the prod files and do the
changes live, then run a simple script that prints the diffs I can
review before commiting. Upon commit a notification email with commit
log and changes is sent. I use this technique for many other things like
cronjobs, file servers (exports, rsyncd, samba), Linux-HA, httpd config,
etc...
