Just specify that address as the email parameter for a contact that's being notified. Because you're sending mail to the Internet though, you need to follow all of the common rules for sending mail on the Internet. Typically the easiest way to do so is to configure the MTA on your nagios box (sendmail, postfix, exim, qmail, whateveritis) to smarthost mail to your current SMTP server.
