how to reset the service / host uptimes

I would like to start the new year with a clean slate. However I am
confused as to where to start.
We use mysql tables to hold the uptime info. When I stop the daemon the
tables get emptied. If I move the .out files in $NAGIOS/var and start
the daemon back up the tables get repopulated with the old data. Where
is it coming from?
